Westcott Bay Flat Oyster Flavor Profile Characteristics
Westcott Bay Sea Farms is located in Washington’s Puget Sound on the shoreline of San Juan Island near the Canadian border. The productive bay is enriched by the clean, cold waters of the Straits of Juan de Fuca. Westcott Bay Flats (aka “Belon”) are spawned in the Westcott Bay hatchery and cultivated in lantern nets suspended in deep water for optimal growth and safety from predators. The harvested shellfish are cleaned to table-ready condition, chilled and hand-packed. The Westcott European Flat has a complex flavor with a distinct sweetness.
