Satori Oysters

Satori Oysters are cultivated in the pristine waters off of Denman Island in Baynes Sound on the eastern side of Vancouver Island, British Columbia. They are grown by Greg & Hollie Wood who run the family owned business and have been cultivating oysters since 1996 and they are Ocean Wise sustainably approved.
Satori Oysters are beach cultivated and they are machine tumbled in order to give them a uniform shape and deep cups.
Their time on the beach hardens their shells and increases the “bite” or texture of their meats because as the tides go out they have to clamp shut for extended periods of time. The result is oysters with a longer shelf life and a little firmer meats. Satori oysters have moderately firm meats, a fresh taste with moderate brine, and a hint of cucumber on the finish.
