Purple Mountain Oyster Flavor Profile

Purple Mountain OystersPurple Mountain Oysters are a new variety of Pacific Oyster (Crassostrea gigas) being cultivated off Tekiu Point in the central Hood Canal region in Washington State. They are suspension tray raised and tide tumbled.  This combination of cultivation gives these oysters beautifully colored shells with very deep cups, providing more of that luscious liquor which oyster connoisseurs love. They have beautifully colored shells with deep cups, firm, plump meats with a light mineral flavor and a bright brininess.
