Buckley Bay Oysters Flavor Profile

Buckley Bay Oysters are a fabulous oyster from the shores across from Denman Island in Baynes Sound on the Eastern side Vancouver Island in British Columbia. The remote area is known for clean, pristine water which is perfect for oyster cultivation. They are hand harvested with a market size of 2″ – 3″ and 3″ – 4″ live in the shell.
Buckley Bay oysters have firm meats with a medium brininess, a crisp clean flavor and light melon finish. Other info on the web says that they are a beach grown oyster or bag to beach cultivated. The most recent ones I received (May 2018) appear to be bag to beach cultivated with minimal time on the beach because they do not have the hard shells and occasional barnacle which which beach cultivated oysters have.
