Mad King Oysters
Why the name Mad King Oysters? Well, the story goes that they have very deep cups and a flavor which makes them a royal treat! They are named after medieval royalty who had wild ambitions. Mad King oysters are a tidal basket cultivated oyster which is a relatively new cultivation method which uses a stationary line of suspension baskets which are attached to floats in such a manner that as the tides eb and flow the tray is naturally raised and lowered causing the oysters to be tumbled. The result is nicely shaped shells with very deep cups.
Mad King oysters have very deep cups with plenty of liquor. They have a toothsome texture with a medium brine and a savory kale-like finish. They are raised in Humboldt Bay, California, are available year around in sizes ranging from 2″ to 4″ for fresh, live, in the shell product. They are available through Pacific Seafood.
