Westport Island is located west of Boothbay, Maine, nestled among the network of islands in this beautiful, somewhat remote region. Westport Island Oysters are cultivated on the eastern side of the island in racks which keep them off the bottom of the bay, which gives them better access to nutrients and contributes to a cleaner, more uniformly shaped shell than a bottom cultured oyster.

Westport Island Oysters have nicely developed cups with plump, silky meats, robust flavor, high salinity, and a buttery finish. They take 3 to 4 years to reach a market size of 3 ½”. Availability is somewhat limited.
