South Hampton Select Oyster Flavor Profile Characteristics
South Hampton Select Oysters are from one of the Long Island oyster appellations in the New York & Connecticut oyster region. They are cultured near Robin’s Island, which is located where the waters of Little and Great Peconic Bays meet. Peconic Bay itself is formed by the two pronounced peninsulas which jut into the Block Island Sound from the Eastern end of Long Island. Peconic Bay ebbs and flows with the Atlantic tides and so twice a day it is replenished with nutrient rich waters.
South Hampton Select oysters are rack & bag farmed oysters which are finished in suspension trays. During their time in the suspension trays South Hampton Select oysters are chipped six times to manicure them and harden their shells.
