Peconic Bay Oyster Flavor Profile

Peconic Bay’s are a New York State oyster from one of the Long Island oyster appellations. Owner Jeff Kraus is a fisherman by trade, but in the mid 1990’s he began farming these boutique oysters “on the side”, and after a series of court battles with the local municipality, he secured the rights to farm and sell his oysters. He sells exclusively to a local restaurant and to Blue Island Oyster Company who describes them as “a plump and ebullient gulp of summer”!

Other oysters from this area include the Robin’s Island (East End), Shelter Island, Widow’s Hole and Pipes Cove.
