Like other Flounder, Rex Sole have mild, sweet flesh with small, firm flakes and flesh which is white when raw as well as when cooked. They are considered one of the better Pacific Flounders.

Rex Sole Description (Glyptocephalus zachirus, Errex zachirus)
Rex Sole are actually a right-eyed Flounder, not a Sole, but are called “Sole” because the term is more marketable. They have a uniform light brown to grey colored skin on their upper side and are off-white on the belly. Rex sole grow to about 2 feet long with a maximum weight of 4 1/2 lbs, but most are caught at a weight of about 2 pounds.

Range & Habitat
Rex sole are found in the eastern Pacific, from the Bering Sea to Baja California in Mexico, and in the western Pacific from the Sea of Japan to the Russian coast. They dwell at depths up to 3000 feet deep.
