Fresh wild Coho Salmon is milder flavored and more lean than Sockeye and King Salmon. But it still has enough firmness and oil content to lend itself to a wide variety of cooking applications.

Coho Salmon Flavor Profile

Coho Salmon are medium flavored with medium flakes and moderate fat content. The flesh is lighter than Sockeye and usually lighter than King.

Coho Salmon Description (Oncorhynchus kisutch)

Cohos are metallic blue on the back and silver on the sides. They have mottled black spots along the back and upper portion of the tail, and they have white gums. Coho average 5 – 12 lb as commercial fish but get as big as 25 lb. Filets range from 1 – 4 lb.

During spawning, Coho turn red below the lateral line and their nose becomes the shape of a hook. Follow the link for a video on how to identify species of salmon.
