Chelsea Gem Oysters are a Pacific Northwest oyster from one of the South Puget Sound oyster appellations in Washington State. They are a rack & bag farmed oyster. They are grown in mesh cages or bags which are staked low to the bottom. Oysters raised by the rack & bag method are protected from predators and do not become cramped for space as they grow. They also do not have to filter as much sand & mud in order to get nutrients, thus they grow faster. Usually, if the oyster is raised entirely by the rack & bag method then they are pampered and their shells tend to be brittle. But with Chelsea Gems there is enough intertidal current to beat them up just enough to toughen-up their shells nicely.
