Index of Atlantic Half Shell Oyster Varieties

There is a huge variety of fresh oysters availble for chefs to use on their menus today.  Oyster flavor profiles have advanced to the point of being akin to wine tasting.  Connoisseurs discuss the complexity of the oyster, the salinity, the hints of melon or cucumber, the finish.  It can be rather daunting to remember it all.

On the right (or below on mobile devices) you will find an index of East Coast oyster varieties available in the United States and Canada.  Each link will bring you to that oyster’s culinary profile and give you information on it’s flavor profile, description, cultivation method, and seasonal availability.  The majority of these oysters are of the Atlantic Virginica Oyster Species (Crassostrea virginica).
