Also, limiting the size to 3" is incorrect. medium sized pacific are at least 3", while by special order, Large Pacific oysters are available at sizes of at least 4 inches, up to 6+ inches. (Large oysters must be ordered and paid for in advance)

2 other species are available at Oregon Oyster Farm;

*The Kumomoto (Crassostrea Sikamea ) having a sweeter, creamier flavor with an almost nutty finish.

*Also the Yaquina Bay Native(Ostreola Conchaplila) (aka, Olympia) which is very small (about 1" in length) with a very salty flavor, reminiscent of Nori in my opinion, but if shucked, drained, and let to stand (chilled of course) they take an a more sweet flavor (not as sweet as the kumo, however).

*The Pacific Oyster comes in 4 classified sizes.

1) Med. (3.5+ inches)

2) Small (2.5-3.5 inches)

3) X-small (1.5-2.5 inches)

4) Petite (1-1.5 inches)

*Oysters are available year round, with raw consumption limited to mid-late September through June. The farm offers oysters from another location specifically for raw consumption throughout these summer months of 'no raw consumption'

*Oysters are grown with 2 methods: 1- suspension 'strings' (not trays) and 2- 'dragers' on the bottom of the river.

 

*our oysters have a sweeter, milder, creamier flavor than other oysters due to the fact that we are 7 miles inland (in the estuary, we are a brackish water oyster farm)
