Umpqua Triangle Oyster Flavor Profile Characteristics

Umpqua Triangle Oysters are a Pacific Northwest oyster from one of the Oregon Coast oyster appellations. They are grown in Winchester Bay where the Umpqua River spills into the ocean.  After the oyster spat is large enough, they are farmed by the suspension line method, suspended on 15' long lines in deep water for the remainder of their lives.  They are always submerged, never kissed by wind or sun, and are protected from predators, mud, sand and silt because they never touch bottom.  It takes 2 to 4 years for these oysters to reach market.  The suspension line cultivation method produces oysters which tend to be clean, sweet & light, with meats which are tender.  True to form, Umpqua Triangle Oysters have a clean, sweet taste with firm pearlescent meats.
