Tatamagouche oysters are wild cutured on the bottom of Tatamagouche Bay which is an estuary formed by the French & Waugh Rivers.  They grow naturally until the time they are harvested.  Tatamagouche oysters have long, shoehorn shaped shells.

Tatamagouche Oysters are inconsistent in flavor. They can be tender-firm with a sweet, nutty flavor and medium salinity. Or they can be watery & tasteless.
