Shortbill Spearfish (Hebi) Flavor Profile

Shortbill Spearfish, also known as Hebi, has a unique flavor described as nutty, citrus and chicken-like.  It's taste is somewhat more pronounced than tuna.  It has firm meat which is somewhat softer than Nairagi or Kajiki, and opaque amber-blush colored flesh which cooks up white.  Of the other bill fish species, it has the softest and most delicate flesh and is great for sashimi.

Shortbill Spearfish (Hebi) Description (Tetrapturus angustirostris)

The Shortbill Spearfish is a species of marlin which has a dorsal fin which is shorter than other billfish species, and its bill is so short it is almost non-existent.  The average weight of Hebi caught in Hawaiian waters is between 20 to 40 pounds.
