Shortbill Spearfish (Hebi) Flavor Profile
Shortbill Spearfish, also known as Hebi, has a unique flavor described as nutty, citrus and chicken-like. It's taste is somewhat more pronounced than tuna. It has firm meat which is somewhat softer than Nairagi or Kajiki, and opaque amber-blush colored flesh which cooks up white. Of the other bill fish species, it has the softest and most delicate flesh and is great for sashimi.
