Rex Sole Flavor Profile

 Like other Flounder, Rex Sole have mild, sweet flesh with small, firm flakes and flesh which is white when raw as well as when cooked.

Description

 Rex Sole are actually a Flounder, not a Sole, but are called "Sole" because the term is more marketable.  Rex Sole grow to about 2 feet.  Maximum weight of Rex Sole is about 4 1/2 lbs.

Range & Habitat

 Rex sole are found in the eastern Pacific, from the Bering Sea to Baja California in Mexico, and in the western Pacific from the Sea of Japan to the Russian coast.  They dwell at depths up to 3000 feet deep.
