Salt Pond Oyster Flavor Profile Characteristics

Salt Pond Oysters are cultivated on a 22 acre farm run by Dave Roebuck in the tidal pools of Point Judith Pond, Rhode Island. Point Judith Pond, nicknamed Salt Pond, is a shallow, four-mile long salt body of water lying behind the barrier beaches and sand dunes that form Point Judith Harbor near the towns of of Narragansett and South Kingstown.

They are a bottom cultured oyster which results in full, plump meats and hard shells which make them easy to shuck. They are harvested by divers or bullrake, cleaned, tumbled and hand culled. The highest quality oysters with the deepest cups and best shape are sold as Salt Pond Selects.

Salt Pond Oysters have creamy, plump meats with an intense brininess, a pronounced mineral flavor and an overall complex flavor. They are not for the timid oyster eater, but the oyster aficionado will love the big, bold taste of Salt Ponds.
