Salish Oyster Flavor Profile Characteristics

Salish Oysters are a Pacific Northwest oyster from Baynes Sound, one of the British Columbia oyster appellations in Canada.  They are cultivated first in trays which protects them from predators and gives them access to more nutrients.  Then they finish their grow-out on the beach to give them a harder shell and firmer meats.  However, they still have moderately brittle shells which shuckers will have to give extra care so as not to break the shell.  Salish oysters have a bright, long lasting brininess, good flavor, and are mildly sweet on the finish.
