Pipes Cove Oyster Flavor Profile Characteristics
Pipes Cove Oysters are from one of the Long Island oyster appellations in the New York & Connecticut oyster region near Greenport. Since as far back as the 1880’s, Pipes Cove has been one of the prime oyster producing areas, chosen by local bay men, at a time when oyster cultivation in Long Island’s Peconic bay first began. Pipes cove is surrounded by rich tidal marshlands which produce concentrated nutrient levels. Combine those nutrients with the addition of a strong, cool tidal flow and you get a great cultivated oyster.
