Okeover Organic Oyster Flavor Profile Characteristics
Okeover Organic Oysters are from the Okeover Inlet along the Sunshine Coast in one of the British Columbia oyster appellations. This oyster farm uses a combination of two methods of cultivation. They start their oysters on trays in suspended culture where they get periodically tumbled. After six months they get put on the beach where they remain on the beach for at least another year. This method gives them both a nice deep cup and a very strong shell, resulting in no breakage when shucking.
