Nisqually Sweet Oyster Flavor Profile Characteristics

Nisqually Sweets are a beach cultivated oyster from Southern Puget Sound in Hogum Bay near the mouth of the Nisqually River by Olympia, WA.  The Nisqually River is fed by the streams and glacial melt of Mount Rainier, which provides a rich source of nutrients and minerals for these excellent bivalves, resulting in oysters which are plump, buttery and sweet with a bright briny flavor. 

They are officially cultivated by the National Fish & Oyster Co., and although they have grown oysters since 1939, they haven’t done any commercial fishing since the 1950’s.  They do however cultivate clams and geoduck in addition to oysters.

Even though they are a beach cultivated oyster, Nisqually Sweets have beautifully fluted shells which are the result of their rapid growth.  The area is so rich in nutrients that these beauties reach market size in about 18 months.
