Little Shemogue Oysters (aka Little Shems) are a premium oyster variety being raised in Little Shemogue Bay, New Brunswick, Canada.  Like most East Coast oysters, they are of the Virginica species.  They have hard shells which are easy to shuck and full meats with a medium-high brininess and a smooth, mildly sweet finish.
