Dune Shadow Oyster Characteristics
Dune Shadow Oysters are a new oyster variety being raised in southeastern New Brunswick, Canada. Like most East Coast oysters, they are of the Virginica species. They have hard shells which are easy to shuck and full meats with a high brininess and a smooth, mildly sweet finish.
