Cuttyhunk Oyster Flavor Profile Characteristics

Cuttyhunk Oysters are a Atlantic Oyster from one of the Massachusetts & Rhode Island oyster appellations.  They are cultivated at the farthest end of the Elizabeth Islands on Cuttyhunk Island at West End pond.  Cuttyhunk Oysters are farmed by the lantern suspension method.  Lantern suspension is a Japanese method of oyster aquaculture which is very unique.  Oysters are suspended in lantern shaped nets in deep water their entire lives.  They are free from predators & silt.  And they are grow quickly because they have a constant source of nutrients.

The oyster flavor profile of suspended oysters tends to be clean, sweet & light, with meats which are tender.  And the shells tend to be very brittle and difficult to shuck without breaking.  Cuttyhunk oysters taste is light & clean with an intense brininess and tender meats.
