Cotuit Oyster Flavor Profile Characteristics

Cotuit Oysters are an East Coast oyster grown in the waters of Cotuit Bay on Cape Cod. They have been farmed in the same area by the Cotuit Oyster Company since 1857.  Today they are cultivated by very specific methods which give the oysters plenty of rich, natural nutrients which in turn causes them to grow quickly.  Cotuit oysters have beautiful shells with a distinctive jade green color. The oysters are naturally tumbled by wave action when they are young, creating strong shells before they are bottom planted.
