We are the Professional Chefs resource for the culinary information which chefs need on a daily basis. Chefs Resources provides free information on many facets of kitchen management and culinary product utilization. On the topics of seafood, oysters, produce, and beef we provide flavor profiles, yield percentages, availability of fresh product and more.
The Chefs Resource for Fresh Seafood
Our seafood listings are added to each week and will eventually profide information on every commercially availble seafood in North America. Each seafood listing is given a species profile which includes general information about the fish or shellfish, it's flavor profile, yield percentage if appropriate, when it is available fresh and nutritional information. The Seafood Yields page list the butchering yield % for various fish. And the Fresh Fish Availability page gives an annual chart showing when each species is avaiable fresh.
Have you been looking for a chefs resource for oysters? There are over 100 oysters listed in Chefs Resources. Each profile includes the oyster species, its flavor profile, growing location, size, cultivation method. We have an extensive list of Pacific Northwest Oysters. There are only a few California Oysters, and we list them. And the East Coast Oyster list is ever-growing.
Kitchen Management Tools
