Bedeque Bay Oyster Flavor Profile Characteristics

Bedeque Bay Oysters are an Atlantic oyster from one of the Prince Edward Island oyster appellations in Canada.  They are cultivated in Salutation Cove which receives two strong tidal surges each day which provide rich nutrients for the oysters.  Because of this, both the Bedeque Bay and Summerside oysters which are cultivated here grow twice as fast as the other Prince Edward Island oysters.  These rich nutrients also add to the distinctive taste of these oysters which are stronger flavored than the typically light flavor of Canadian Maritime oysters.
