The waters of Barnstable Harbor are cold, clean oceanic waters which make Barnstable oysters a distinctly clean tasting oyster.  Barnstable Oysters are available in limited supply and the farm belongs to the "Cape Cod Buy Fresh Buy Local" movement which give preference to restaurants who deal with locally produced products.
