Atlantic Half Shell Oyster Varieties

There is a huge variety of fresh oysters availble for chefs to use on their menus today.  Oyster flavor profiles have advanced to the point of being akin to wine tasting.  Connoisseurs discuss the complexity of the oyster, the salinity, the hints of melon or cucumber, the finish.  It can be rather daunting to remember it all.

Small to medium size

tan greenish shell

firm crisp salty meat finishes sweet.
