Alba Bras d'Or Lakes Oyster Flavor Profile Characteristics

Alba Bras d'Or Lakes Oysters are an East Coast oyster from one of the Nova Scotia oyster appellations in Canada.  The crystal clear waters of the Bras d'Or lake connect with the Atlantic Ocean and its unique tidal waters are reponsible for Alba Bras d'Or oysters unrivalled quality .

They are cultivated using two separate methods.  They are farmed by the tray suspension method for one year, near the surface during summer months and below the ice in winter.  Suspension tray cultivation gives the oyster a deeper cup and protects it from predators during its vulnerable youth.  After this they are moved to the bottom where they slowly grow for about three more years.
